In St.Pedro de Columbia, Mayan District, Toledo, South Belize we meet Mr. Eladio Pop.  Agroforester, cacao maestro, youtube sensation. The sprawling concrete home for his large multigeneration family perches on a dusty hilltop with lovely views of lush rainforest hiding superfine cacao orchards in the valleys around.

 

We are shown a large wooden mould used to make pucks of untempered chocolate and we taste little tablets of 100% of the same.   We agree to buy as much as we can carry and offer it here for you.

 

Expect notes of sweet citrus, hints if hazlenut, tamarind and honey up front, medium intensity, full, no-added-cacao-butter body.   We end with a little tangy twist in the tail, a marker of the unfermented nature of the cacao.
