We sampled a lot of Chuncho cacaos... it's the most diverse varietal in the World of fine cacao.  As always, we look for fine flavour, fine people, flawless ethics and robust reliability. 

 

The cacao is grown in the center-south of the Peruvian Amazon and in the heartlands of the ancient Inca Empire. The ruins of Machu Picchu are surrounded by tropical forests where the valley of the Apurimac, Ene and Mantaro rivers are located, and the presence of cocoa plantations dating back to imperial times. The area today has a strong presence of drug trafficking that limits the availability of this cacao and that gives special value to the work of farmers.  It's good to have options; this cacao offers options to farmers and makers alike. 

Variety: Very complex, intricate, versatile Chuncho cacao.  The origin of the species, Chuncho is the first cacao, and the most diverse with 141 sub-varietals.  

 

Aromatic Profile: Intense floral notes of pink flowers, citrus fruits such as pink grapefruit, passion fruit, notes of peach, plum and raspberry, presence of nuts such as almond and notes of licorice.  Fruit, Nut, Sweet, Dark Sugar, Chocolate, Dairy, super diverse, there are many delicious profiles appearing around the 70-80% mark.

We are very proud to be the first and only team in the UK to have access to this cacao, imported bulk so we can provide to other makers in Europe and beyond.  If you want to experiment, grab a few kilos.  If you want to properly explore this cacao, we can offer better rates for larger orders, with breaks every 10kg.  Really must be tasted to be believed!
