The profile offers raspberry, fresh walnut, hazelnut, light muscovado and chocolate too... a whole new thing! A sparkling acidity remains and lingers with a pleasant bitterness (think Americante).
We purchased the cacao direct from Adrian and Elida of Ajaw (which means Elite in Mayan) in San Ignacio, Belize.
A few hours north of the tropical rainforests and major cacao district in Belize, the Mayan Heartlands, San Ignacio offers a cooler climate, a more diverse population and the best Saturday food market in Belize. It's not easy to grow and ferment great cacao in this region, but Belize is a land containing only fine flavour cacao.
Adrian explained to us the difficulties of growing and fermenting fine flavour cacao in the Central Highlands of Belize - it's cooler and cloudier than the Maya Heartlands. He offered us some of his cacao, which we purchased at just over £40/kg. Directly supporting the important work of preserving a rare type of cacao tree that grows in an unusual terroir is our honour and privilege. We visited on Emancipation Day, where Belizeans focus on freedom from British enslavement, so it was touch and go initially, but we never enslaved anyone, quite the reverse! We bonded over a love of superfine cacao, superfine chocolate, freedom and direct trade.
